Gliadorphin

Gliadorphin is an opioid peptide which is formed during digestion of the gliadin component of the gluten protein. It's usually broken down into amino acids by digestion enzymes, but in some individuals they are not. The peptides are then accumulated in the body over time and can lead to a peptide poisoning. The effect of gliadorphin resembles that of gluten exorphines.
