Streptococcus salivarius


Streptococcus salivarius subsp. thermophilus is used in yoghurt manufacturing. It works symbiotically with Lactobacillus delbuekii subsp. bulgaricus. Both are homofermentative, produce lactic acid quantitatively in addition to carbon dioxide and alcohol. The optimum temperature for their growth is about 42°C.
